I am trying to figure out a way to track date, symptoms, triggers, what gave relief, weather, prn meds, fit bit info etc.
I am hoping someone might have an idea of a spreadsheet already out there that might be helpful vs me trying to reinvent the wheel which isn't going well so far.

No spreadsheet for me. I like Gail663 either write it down or plug the information in my notes on my phone.

Not me, though, just writing things down is good, lol, so long as you keep the notes together and not lose them before showing them to your doctors.
